🥭 Mangos + Holiday Spirit = Pure Deliciousness! 😋

Can you believe the holidays are just around the corner?

Crazy, right? 😊

I've got something special for you today — my favourite Festive Mango Salad recipe. 🥭

It's a real beauty not only for those sunny summer get-togethers but also any holiday gathering.

Light, fresh, and oh-so-yummy!

Ingredients

4 cups baby spinach
1 cucumber, halved and sliced into half moons
1 large red capsicum, cored and thinly sliced
Fresh and ripe mangos, peeled and sliced (about 4-5 mangos)
2 Onions, halved and thinly sliced

1 cup Currants
1 cup fresh cilantro (chopped)
1 cup fresh mint (chopped)
Salt and pepper
1 Large lime (juiced)
1 Tbs of extra virgin olive oil

Preparation Time: 15 minutes total

Instructions

Light up your BBQ.In your Flat Stacks salad bowl, mix together the spinach, cucumber, capsicum, mango, onion, currants, and herbs.
Season with salt and pepper.
Drizzle in the lime juice and about 1 tablespoon of extra virgin olive oil.
Then, toss everything to combine.
Taste and adjust the seasoning as needed.
Serve straight from your salad bowl that comes with your lid, which is perfect to keep leftovers fresh or keep those pesky bugs out.
